The very delicate pink colour suggests a rose in the provence style, and yes it smells like fresh strawberries, even wild strawberries, and some fairground candy floss sweetness. The ancient Castorani soil is full of seashells and there is a whiff of marine minerality.
Taste is full and rich bodied, with notes of red and exotic fruits and ending with long notes of mature fruits.
This is a perfect aperitif, very comfortable to drink on its own or with nibble food. It works amazingly with sushi: ginger, soya. Thai and indian too; coriander and chili. It’s in general a killer match with eastern cooking flavours that often rip european wines apart. All those hot salty flavours just seem to boost the fruit and turn this into a year-round stunner.
100% montepulciano, the wine is aged sur lie for 5 to 6 months, giving the wine its creamy texture. Partial malolactic fermentation.
Vinification: bleeding off after a maceration with skins at low temperatures for 12 hours, fermented at 18º C.
